The Bistro at Fantasy Springs will serve a menu with some seafood dishes including a sushi roll of tempura shrimp, avocado, tobiko, passion fruit-mango salsa, eel sauce, wasabi and ginger, $16 Chateaubriand surf and turf with grilled vegetables and parmesan truffle fries, $65 and Chef Freddy’s Kissing Swans, which come with white chocolate mousse, raspberry mousse, flourless chocolate cake and paté choux swans, $12.
